Normally during Chinese festival, especially Chinese New Year, roast pork is one of the very high demand item.


The price sometimes can go up-to 30%. Also, for some famous and nice-to-eat roast pork sellers, no booking in advance, no pork for you or very long queue. Due to high demand, large orders, they have to roast the pork many hours in advance, by the time you eat the pork (worst case for reunion dinner), it will become less crispy or not crispy at all.


So I decided to learn the roasting process. Sometimes I will choose this dish for potluck gathering, you will enjoy this very much with your favorite white wine.


You may add fermented red bean curd (nam yue 南乳), five-spice powder (五香粉) or lime juice for different taste. If you prefer more English style, you may add English mustard.
For today, I have added fermented red bean curd, five-spice powder and white pepper powder.

Easy Blueberry Muffins Recipe  (莓麥芬食谱)
Ingredients: < Makes 12 muffins >
  • 250g self-raising flour
  • 2 eggs
  • 125g sugar
  • 60g water
  • 60g vegetable oil
  • 1/2 tsp vanilla essense
  • 90g frozen blueberries
  • Blueberry Jam and Icing Sugar for topping / decoration (optional)
Steps:
  1. Preheat oven at 175’C.
  2. Grease muffin pans or get ready with muffin paper cup.
  3. Beat egg and sugar; stir in water and vanilla essence.
  4. Stir in flour until mixture is moistened (should be lumpy).
  5. Stir in blueberries and oil.
  6. Fill muffin cups with 2/3 full and bake for 20-25 minutes or until golden brown.
Note: You may replace the frozen blueberry with dried blueberry.
Soak the dried blueberry in water or fruit juice for 1 hour. Dry with paper towels and toss them with a tablespoon of flour.

Pandan Layer Sponge Cake 百吃不厌的班兰千层糕



The pandan (also known as screwpine leaves) kaya layers is using green bean flour (or Hoen Kwe flour from Indonesia), boil with both agar-agar and instant jelly powder.

Agar-agar powder vs Instant Jelly Powder
Agar-agar powder is a processed gelatine-like product that is primarily obtained from seaweed. It is made into odourless, transparent strands or shaved into fine flakes or powdered. Agar-agar is fast-setting and gives a rather hard and crunchy texture.

Instant jelly is similar to agar-agar powder but it gives a smooth and softer texture.

So the proportion of these two depend on your preference whether you like to make the pandan kaya filling harder or softer.
