Easy Blueberry Muffins Recipe  (蓝莓麥芬食谱)
Ingredients: < Makes 12 muffins >- 250g self-raising flour
 - 2 eggs
 - 125g sugar
 - 60g water
 - 60g vegetable oil
 - 1/2 tsp vanilla essense
 - 90g frozen blueberries
 - Blueberry Jam and Icing Sugar for topping / decoration (optional)
 
- Preheat oven at 175’C.
 - Grease muffin pans or get ready with muffin paper cup.
 - Beat egg and sugar; stir in water and vanilla essence.
 - Stir in flour until mixture is moistened (should be lumpy).
 - Stir in blueberries and oil.
 - Fill muffin cups with 2/3 full and bake for 20-25 minutes or until golden brown.
 
Soak the dried blueberry in water or fruit juice for 1 hour. Dry with paper towels and toss them with a tablespoon of flour.
One of my favorite! Looks easy, will try to do it when my oven is getting hot! :p
