Lamingtons are an Australian specialty cake
(sponge, butter, or pound). These small squares (cubes) of cake are dipped in a
chocolate frosting/icing and then covered/rolled in coconut.
Lamingtons are commonly found in South African and
Australasian outlets such as cafes, lunch bars, bakeries, home industries and
supermarkets.

Lamington Ingredients |
Chocolate Frosting: Place the confectioners' sugar, cocoa powder, butter and milk in a heatproof bowl over a saucepan of simmering water. Stir the mixture until it becomes smooth and of pouring consistency.

Hawaiian Coconut Flake / 椰丝 |
Ready baked butter, sponge or pound cake.
Cut into cubes (squares)
Dip, spoon or ladle the chocolate frosting over each square of cake, making sure you cover all sides. |

Roll
the cake in the coconut, covering all side

Gently
transfer the lamington to a clean wire rack to set.
Once the Lamingtons have set, it can be stored in an airtight container for several days.

Preheat oven at 170'C for at least 10 minutes. Bake for 35 - 45 minutes, or until cake skewer come out clean.
